Here’s a new twist on a classic bean salad!

Cowboy Caviar, a simple bean salad combining beans, fresh veggies and a light and zesty vinaigrette, is an old favorite of ours. With colorful, fresh ingredients and bright flavors, this mix goes great as an appetizer or party starter with chips as a dip or as an easy, healthy and delicious salad great for plan-ahead lunches.

Most cowboy caviar recipes call for black-eyed peas, but with the release of our new Ultimate Four Bean Mix, this recipe deserved an Ultimate Update. The perfect mix of great northern beans, black beans, kidney beans and pinto beans gives each bite different flavors and textures. Every bite is a party!

Dressed in a simple cilantro and jalapeno vinaigrette, our cowboy caviar has a mild kick and sweetness without all the sugar of a traditional recipe. It is the perfect dressing and salad mixture to pair with chicken, burgers or pork from the grill at your next cookout or family gathering.

Don’t worry about doubling down on the portions either, this recipe is extremely versatile as leftovers! This bean mix goes great over lettuce or mixed greens as a topper for a regular salad or mixed into an omelet for a breakfast option.

Leftover salad and dressing will last for about a week in your refrigerator in airtight containers, so leftovers can also be a great lunch option for the coming week. But we wouldn’t count on there being any leftovers… it’s that good!

Randall Beans Cowboy Caviar

Ingredients

  • 1 48oz. jar of Randall Beans Ultimate 4 Bean Mix
  • 2 Roma tomatoes, diced
  • 1 red pepper, diced
  • 1 orange bell pepper, diced
  • 1 can of yellow sweet corn
  • 1 bunch of green onions, whites removed and finely chopped
  • For the dressing:
  • 2 cups of tightly packed cilantro
  • 2 garlic cloves, finely minced
  • 2 jalapeno peppers (sliced with seeds removed for less heat)
  • 1/4 cup olive oil
  • 1/4 cup of lime juice
  • 1/4 cup rice wine vinegar
  • salt and pepper to taste

Instructions

  1. In a large food processor, add the ingredients for the dressing. Pulse to break up larger pieces, then blend for up to thirty seconds, until uniform consistency is reached. Transfer to a container with airtight lid and set aside.
  2. Drain and rinse Ultimate 4 Bean Mix and sweet corn and put into large bowl.
  3. Finely dice tomatoes, peppers, and green onions and add to beans and corn.
  4. Pour dressing over bean salad, until evenly coated, and gently stir to combine.
  5. Cover and refrigerate for at least an hour for all the flavors to absorb.
  6. Serve chilled with tortilla or veggie chips.
