Ingredients

  • 1 pre-made 9-inch pie crust in the pie pan
  • 1 cup of sugar
  • 1 Tbsp. of wheat flour
  • ½ tsp. cinnamon
  • ½ tsp. pumpkin pie spice
  • ½ cup evaporated milk
  • ¼ cup melted butter
  • 2 eggs
  • 1 Tbsp. vanilla extract
  • 1 cup mashed Randall Ultimate 4 Bean Mix
  • 1 cup whole Randall Ultimate 4 Bean mix

 

Instructions

  1. Preheat your oven to 350 degrees °F
  2. Combine the sugar, flour, cinnamon, and pumpkin pie spice in a bowl. Add the evaporated milk, butter, eggs, and vanilla, then stir. Add the mashed beans and whisk until the mixture is thick and smooth. 
  3. Add a layer of whole beans to the pie crust. Next, pour the mashed bean filling into the pie crust. 
  4. Place the pie on the bottom shelf of the oven and bake until the edges are nicely browned and the center is firm (about 60 minutes.)
  5. Serve warm or at room temperature.
