For those of us watching our calories, it’s a sad fact of life that most cookies need to be an every-once-in-a-while indulgence. Best of This Life replaces much of the traditional calorie-laden fat with high-protein Randall Great Northern Beans, resulting in a mouthwatering gluten-free chocolate chip oatmeal cookie you can eat with zero guilt. Now we’re talking!

Ingredients

• 1 1/2 cups old-fashioned oats—finely ground but not powdery

• 1 1/2 cups of flour

• 1/2 tsp baking powder

• 1/2 tsp baking soda

• 1/4 tsp salt

• 3/4 cup drained Randall Great Northern Beans

• 3 Tbsp butter, softened

• 3/4 cup firmly packed light brown sugar or coconut sugar

• 2 large eggs

• 1 tsp pure vanilla extract

• 1 cup semi-sweet chocolate chips

 Instructions

Preheat oven to 350°F.

Line two baking sheets with parchment paper.

Combine ground oats, flour, baking powder, baking soda, and salt in a bowl.

In a clean blender or food processor, puree Randall Great Northern Beans and 2 tablespoons of water. 

Combine bean puree, butter, sugar, eggs, and vanilla in a separate bowl and beat well.

With the mixer on low speed, beat in the oat and flour mixture. 

Stir in chocolate chips by hand. 

Drop batter (by the tablespoon) onto the baking sheets. 

Bake for 15 to 17 minutes until the centers are firm and the edges are lightly browned. 

Transfer the cookies to a wire rack to cool.
