What better way to celebrate a new graduate than with cupcakes? This unique recipe for cupcakes includes Randall Great Northern Beans, so it’s a quick, easy, delicious way to add some protein to a classic treat. Enjoy plain or with frosting!

Ingredients

• 1⅓ cups of Randall Great Northern Beans, drained

• 1 box of yellow cake mix

• 3 eggs

• ½ cup of unsweetened applesauce

    Instructions

    Preheat the oven to 350 degrees F. Line two cupcake pans with paper liners and lightly mist the insides with a non-stick cooking spray so the cupcakes don’t stick. Set aside.

    Add the Randall Great Northern Beans and one cup of water to a blender and purée until completely smooth.

    In a medium mixing bowl, combine bean purée, cake mix, eggs, and applesauce and stir to create a velvety batter (it’s okay if you have some small bumps throughout). 

    Fill cupcake liners until they are three-quarters full, and bake according to the directions on the box (for cupcakes, it’s typically 19-23 minutes). To check for doneness, insert a toothpick into the middle of one. They’re done when it comes out clean.
