For World Environment Day, treat your body as well as you treat the earth! You can splurge all you want on these slightly spicy, velvety chocolate white bean cookies—made with creamy Randall Great Northern Beans and healthy fats such as olive oil and almonds—and not feel guilty. 

Ingredients

• 1⅓ cup of Randall Great Northern Beans, drained

• 1 egg

• ½ cup of brown sugar

• ¼ cup of olive oil

• 1 cup of rolled oats

• ½ cup of raw almonds, chopped

• 2 oz of sweet dark chocolate, chopped

• ⅓ cup of candied ginger, chopped

• ½ cup of self-rising flour

    Instructions

    Preheat the oven to 350 degrees F. Place a sheet of parchment paper on each of two baking sheets.

    Puree the Randall Great Northern Beans in a food processor. Add the egg, sugar and olive oil, and mix until well combined.

    Combine the oats, almonds, chocolate, and ginger in a large bowl. Add the bean mixture and stir well. Add the flour and stir until combined.

    Using two tablespoons of the mixture for each cookie, spoon onto the prepared trays and press into flat circles.

    Bake the cookies for 20 minutes, until evenly browned.
