Perfectly snackable, dippable and shareable, nachos are the perfect food to serve to a hungry group of sports fans. And while you won’t win any healthy competitions with a plate of nachos, by making homemade bean nachos you can lighten the dish up and control your fat, sugar and salt levels.

The chips are a great place to start. Store-bought chips can be loaded with extra salt and other unnecessary ingredients. Frying up tortillas in a little bit of oil doesn’t only just make a chip with ingredients you can better control, but the chips are better too!

One of the big highlights of this dish, of course, is the refried bean mixture that helps hold it all together. The recipe is oh-so-easy to make and dangerously good. All you need is a jar of Randall Beans pinto beans and a few other simple ingredients.

This recipe is the perfect base for the ultimate batch of nachos. Don’t be afraid to mix it up by adding veggies shredded lettuce, tomatoes, black olives or chopped onion, dips like sour cream, salsa or guacamole and extra toppings like ground beef, turkey, steak, shredded chicken or extra pinto or black beans. The perfect plate of nachos has only what you what you want on it!

Ball Park Refried Bean Nachos

Ingredients

  • 10 large flour tortillas
  • Vegetable oil for deep frying
  • 1 recipe Randall Hearty ‘N Healthy Refried Beans*
  • 1 14-oz. can chopped mild green chilies
  • 3-4 pickled jalapeño peppers, seeded and minced (to taste)
  • 8 oz. shredded jack cheese
  • 8 oz. shredded mild cheddar cheese

Instructions

  1. Cut each tortilla into 6 wedges. Fry in 365-375° vegetable oil until golden and crisp. Remove to a paper-towel lined dish and drain thoroughly.
  2. To assemble the nachos, spread each crisp tortilla wedge with some of the Refried Beans. Mix together the two peppers and sprinkle about 1/2 teaspoon over the Refried Beans. Top with some of each cheese. Place on baking sheets. Top or incorporate any extra desired toppings such as cooked ground beef, steak, chicken or more beans.
  3. Place in a preheated 375° oven just until cheese is melted. Serve hot alongside shredded lettuce, tomato, sour cream, guacamole, salsa or any other desired condiments or ingredients.
