When things get busy, even people who love to cook need a break from cooking. By reducing the effort it takes to get a meal on the table, slow cookers or crock pots can change lives. Yes, change lives. What would you do with a few extra minutes every day? Spend more time with the kids? Pamper yourself? Just imagine it.

Okay, back to reality. Before you can enjoy all that you time, you’ve got to get dinner in the crock pot. Luckily, crock pot cooking is as easy as assembling the ingredients, putting them in the crock pot and walking away. Buy some time with these easy crock pot bean recipes:

 

Slow Cooker Chili

You can’t talk about beans in a crock pot without talking about chili. This is a good basic recipe to have on hand because although it’s great as is,  you can easily adjust the ingredients with whatever you have on hand. Have some extra green peppers in the back of the fridge? Toss them in. This tastes even better on the second day.

 

Slow Cooker Cassoulet

Cassoulet is French comfort food. Traditionally, cassoulet is slow cooked for several hours in an earthenware dish so it naturally adapts well to crock pot cooking. Even though the main attraction here is a tender melt-in-your mouth pork shoulder, the chorizo sausage adds a spicy smokiness that combines well with the tomatoes and beans and permeates the entire dish.  Serve this with store bought French bread and a bagged salad and you’re done.

 

White Bean Chicken Chili

This is a kid friendly white chili with mild flavor. The chicken can be shredded as the recipe suggests or it can be left in bite-sized chunks. Since the beans become very creamy they serve as a nice back drop for toppings like sliced avocado or cheese. Round out the meal with some cornbread on the side and chilled fruit salad for dessert.
