Goal: Bring a homemade lunch to work.

Its 7:00 a.m. on a Monday and the last thing you are thinking about is eating healthy at noon. The kids are screaming in preparation for school, while you are making sure backpacks are packed and each kid is wearing matching socks. You can barely remember if you brushed your teeth this morning, yet somehow its already time to leave for the morning drop off routine.

So, where your homemade lunch? Let us guess, it’s probably still a figment of your imagination and soon to be a forgotten goal. The next step is grabbing the closest microwave meal just to get through the day. Randall Beans wants to help change your lunchtime strategy by never letting you settle for a microwave meal.

Our shrimp and bean salad recipe is the first step to ending your bad eating habits.  The combination of shrimp, beans, olives, green onions, cucumbers and red pepper will leave you feeling full, but not heavy or sluggish. For an added bonus, our shrimp and bean salad tastes best when refrigerated making it an easy dish to grab and go. Ditch the microwave meals for a crisp, refreshing, and flavorful salad.
