fiesta mixed bean spring salad carried to an outdoor spring party

As much as we love the excuse to stay bundled up inside enjoying chili, bean soups, and bean stews in the winter, we are thrilled that spring is finally here! The warmer weather and shining sun is really getting us ready to enjoy another spring and summer of fun and good food – and also getting us in the mood to enjoy some fresh, delicious salads!

Beans are the perfect addition to any salad! You can toss them on as a healthy source of protein or extra flavor, with every different bean bringing something a little different. Our favorite kinds of bean salads use them at center stage along with other fresh ingredients and inspiring spring flavors.

Here is a roundup of some of our favorite spring bean salads we can’t wait to enjoy this year, some from our very own collection and from our favorite food bloggers that got us really thinking spring.

Toasted Garbanzo Bean Salad

The rich nuttiness you get from garbanzo beans makes them the perfect protein for a salad. But, believe it or not, when you toast them, they are even better! The crunch they develop from just being kissed by heat from the oven gives the salad great texture and almost serves as a two-in-one protein and crouton combo! Combine them with some feta cheese, cucumber, olives, and a simple fresh dressing and this is the perfect Mediterranean-inspired you will enjoy all spring.

Arugula Salad with White Beans

Arugula has such a peppery bite it is absolutely perfect when you pair it with creamy and rich white beans. So, do yourself a favor and grab a jar of Randall Beans great northern beans and give this simple and delicious recipe from Dinner at the Zoo a try! Arugula, tomatoes, white beans, red onion, parmesan, and light dressing makes this salad full of spring flavors. But, there’s a little surprise addition from pine nuts! Instead of croutons, this is where the salad gets its nice crunch and a little extra sweetness as the cherry on top.
