Practicing social distancing and staying indoors has made this year a bit of a long spring. But, the way the sun is shining and the way the temperature is staying nice and warm is bringing a lot of cheer to our souls and smiles to our faces knowing that summer is finally here!
And you know what that means: time to fire up the grill! Doing some cooking outdoors on the grill is a great way to enjoy the beautiful weather with your family while still practicing safe social distancing.
You’ll know by now that we absolutely love to make plenty of salads, baked beans, and bean burgers when we start grilling. Nothing is going to change that love this year. Gluten Free Grilled Zucchini Salad with White Beans
This scrumptious summer salad from Our Salty Kitchen is so easy to prepare and is the perfect side dish for any meal off the grill. The key to this recipe is using the freshest ingredients you can to create that vibrant and fresh flavor. Zucchini, corn fresh off the cob, fresh herbs, and fresh lemon juice to help give it that little zing of citrus is an absolute must. She used cannellini beans in her recipe, but it would be even better with substituting out a 15.4oz. jar of Randall Great Northern Beans.
Sweet & Spicy Michigan Baked Beans
Our beans are packaged in our plant in Tekonsha, Michigan. So, this summer we wanted to salute our state by incorporating our state fruit, cherries, into some summer baked beans. But wouldn’t adding cherries make already sweet baked beans too sweet? Don’t worry, this recipe brings the heat along with the sweet by using cherry pepper jam as our source for cherry flavor. The result is a unique baked beans recipe unlike anything you’ve ever had before, that we guarantee will be an all-star at your next BBQ.
