If you’ve never heard of colcannon, you’re about to discover your new favorite St. Patrick’s Day food with white beans. This traditional Irish dish is made with mashed potatoes, kale, and cabbage and features a delectable sauce that uses white beans as its primary ingredient. 

Colcannon goes beautifully with Irish corned beef and other protein entrees. Additionally, this dish is easy to make plant-based without sacrificing any of the texture or taste. 

Prep Time: 15 minutes

Cook Time: 35 minutes

Ingredients

• 8 medium potatoes of your choice, cut into cubes (peel if desired)

• 1 medium onion, diced

• 1 small cabbage, roughly chopped

• 2½ cups of chicken or vegetable broth

• 2-3 cloves of garlic, minced

• 1⅓ cups of Randall Great Northern Beans

• ⅓ cup of bean liquid

• A dash of ground nutmeg

• 2 cups of chopped spinach or kale (requires more cooking time)

• Salt and pepper to taste

Instructions

Cube the potatoes, place them in a Dutch oven and pour the broth over the top. 

Chop the cabbage, dice the onion, and add the mixture to the Dutch oven. 

In a blender, combine the Randall Great Northern Beans, bean liquid, garlic, and nutmeg to create the sauce. Blend and pulse until the mixture is smooth. 

Pour the sauce over the mixture inside the Dutch oven and stir. 

Bring to a slow boil, and then reduce the heat to low. Cook covered for 30-35 minutes on low or until potatoes are softened. Stir occasionally to ensure the potatoes are fully mixed in with the broth and sauce.

Use a potato masher to mash the potatoes within the broth until you reach your preferred consistency. 

Add in the chopped spinach and stir. Cover and let the mixture sit until the spinach is fully wilted. If you’re using kale instead, precooking it is recommended. 

Add salt and pepper to taste.

Serve immediately for best results.
