  • 1 cup hearty bean soup base
  • 1 1/2 tsp Serrano pepper, deseeded and minced
  • 1/8 tsp Kosher salt
  • 1/2 tsp fresh ground pepper
  • 1/2 tsp chili powder
  • 10 slices Genoa Salami
  • 10 leaves of arugula
  • 30-40 sprigs of chives


  1. Combine the soup base, minced pepper and seasonings. Refrigerate for at least 4 hours and up to 24 hours before serving.
  2. When you're ready to assemble, lay out the slices of salami.
  3. Evenly distribute the arugula and chives onto each salami slice.
  4. Spoon a tablespoon of the bean mixture onto the slice then fold in the corners and roll into a cone shape.
