Summer cookouts should be full of good people, good times and good food! That last part, you might guess, is particularly important to us! You wouldn’t want to ruin a perfect outdoor summer get together with lousy food, would you?

When it comes to what makes a good summer cookout recipe, you want to look for food using fresh ingredients, featuring flavors that pair well with other food off the grill and making sure nothing that is too heavy. After all, you want to be able to have enough energy to hop in the pool or throw the football around after you eat.

While we start planning our next cookout, here are a couple of bean recipes you can count on being served up!

Three Bean Pesto Caprese Salad

The combination of tomatoes, basil and mozzarella is such a perfect summer combination the only way we could think to improve upon it was to add beans! Rich and creamy Randall Beans great northern beans, kidney beans and mozzarella pair perfectly with the bright and acidic flavors of cherry tomatoes and the homemade pesto dressing.

We love this salad as a great summer cookout recipe because it is so easy to make, and you can even prepare it the night before and store it in the refrigerator, letting all the flavors marinate together. This is the perfect side dish to some zesty grilled chicken or a crispy veggie burger.

Cheesy Quinoa Black Bean Burger

Speaking of veggie burgers, this bean burger is one of our absolute favorites for summertime! With how cheesy, delicious and a little messy as this burger is, you’ll swear it must be absolutely no good for you. But you would be mistaken! By using quinoa and Randall Beans black beans as the patty, this bean burger is high in protein and low in fat.

There are many vibrant spicy in this patty, but they all come together in perfect harmony and balance with our favorite toppings: tomato, pepper jack cheese and a simple avocado mash. Use wheat buns for extra healthiness or enjoy the patty and toppings with a simple fork and knife if you prefer going breadless. Like our other veggie burger recipes, this one goes great with grilled veggies and baked beans.

Grilled Balsamic Three Bean Salad

This recipe is one of our favorite beans salads for summer because you can prepare it alongside the rest of your meal right there on the grill! Toss your Randall Beans, fresh green beans and onion together with our simple homemade balsamic dressing, wrap them in a foil package and toss it on the grill next to your burgers and chicken. The heat from the grill along with the dressing will help caramelize the onions and cook the rest of the veggies to help make some unforgettable flavors.

This would also be a perfect recipe to try our brand new Ultimate 4 Bean Mix in! Instead of opening two jars of our black beans and garbanzo beans, just use about half of one 48oz. jar of the new mix. More beans equal more to love!

Spicy Southwest Baked Beans

Baked beans are perfect alongside food off the grill. The sweetness of these beans pairs perfectly with the savory meats and proteins you’ll undoubtedly be cooking, making them a must-have for any summer cookout. This seemingly traditional baked bean recipe is particularly great for grilling because of it’s extra sweet and spiciness.

This recipe calls for green chilies and a little bit of jalapeno for extra heat but uses tomato juice instead of ketchup for extra sweetness, helping balance it all out. This is the perfect baked beans dish to include if you want to add a little something special to your cookout.
